Baked Brown Rice

Ingredients

  • 1 1⁄2 cups brown rice
  • 2 1⁄2 cups water
  • 1 tablespoon unsalted butter
  • 1 teaspoon kosher salt
  • 1 bay leaf
  • 1⁄4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Boil water in microwave.
  3. Add rice, butter, bay leaf, salt, and pepper to a 9-inch glass baking dish.
  4. Pour boiling water over rice, cover with foil, and bake for one hour.
