Brussels Sprouts with Bacon and Blue Cheese


1 lb Brussels Sprouts, Trimmed and Halved
½ lb Bacon
½ cup Blue Cheese, Crumbled
2 tbsp Olive Oil
Salt and Pepper


  1. Toss brussels in olive oil, sprinkle with salt and pepper, and roast in a hot oven, cut side down, until tender and caramelized on the bottom.
  2. While the brussels are roasting, cut bacon into one inch squares and fry until crispy. Drain and set aside.
  3. Just prior to serving, toss brussels, bacon, and crumbled blue cheese.
