- Brussels sprouts, trimmed and halved
- Blue cheese or gorgonzola
- Olive oil
- Toss brussels in olive oil, sprinkle with salt and pepper, and roast in a hot oven, cut side down, until tender and caramelized on the bottom.
- While the brussels are roasting, cut bacon into one inch squares and fry until crispy. Drain and set aside.
- Just prior to serving, toss brussels, bacon, and crumbled blue cheese.
